After fermentation, the liquid is separated from the bean solids. The solids become doenjang, while the strained brine becomes ganjang and may undergo further aging and concentration. Salt suppresses many undesirable organisms and helps preserve the seasoning, but it also makes ganjang exceptionally high in sodium. Industrialization introduced standardized cultures, controlled processing, blended products, and acid-hydrolyzed or mixed sauces alongside naturally brewed varieties. Contemporary ganjang consequently ranges from household-aged liquid to factory-made sauce formulated for consistency. Its durable significance is not an exactly demonstrated line from 683, but a well-supported Korean practice of converting soybeans into complementary paste and liquid seasonings through fermentation, salting, separation, and aging.

Silla controlled most of the Korean Peninsula, while Balhae was emerging to the north in former Goguryeo territory. The Silla court governed through an aristocratic hierarchy and maintained diplomatic and commercial connections with Tang China and Japan. Buddhism was a major institutional force, and rice, millets, barley, legumes, vegetables, fish, and preserved foods supported regional diets. Soybeans had long been cultivated in East Asia, but surviving evidence does not permit precise estimates of Korean production. The account linking jang with the year 683 was written retrospectively in the twelfth-century Samguk sagi rather than recorded in a surviving contemporary recipe.
